Bean Drops
- gluten-free, vegetarian, refined-sugar-free, healthy ... tasty!
Ingredients

250 grams white beans (drained, rinsed and lightly patted dry) (1 14 oz. can)

85 grams peanut butter or 80 grams almond butter (1/3 cup)

115 grams honey (1/3 cup)

15 ml. vanilla extract (1 T)

1. 25 ml. sea salt (1/4 tsp)

1. 25 ml. baking powder (1/4 tsp)

1. 25 ml. baking soda (1/4 tsp)

65 grams cacao nibs (1/2 cup) OR equiv. amt. of walnut or pecan crumbs
Directions

Preheat oven to 350° F.

Add all the ingredients (except cacao nibs) to a food processor or highspeed blender and process till smooth.

Transfer to a bowl and stir in chopped cacao nibs or walnut crumbs.

Scoop dough by teaspoonfuls onto cookie sheets and bake for 20-25 min or until golden.
Notes:
-
Cookies freeze well and can be eaten directly from freezer.

For vegan option, substitute maple syrup or date paste for the honey.
