Bean Drops

  - gluten-free, vegetarian, refined-sugar-free, healthy ... tasty!

Ingredients

  • 250 grams white beans (drained, rinsed and lightly patted dry) (1 14 oz. can)

  • 85 grams peanut butter or 80 grams almond butter (1/3 cup)

  • 115 grams honey (1/3 cup)

  • 15 ml. vanilla extract (1 T)

  • 1. 25 ml. sea salt (1/4 tsp)

  • 1. 25 ml. baking powder (1/4 tsp)

  • 1. 25 ml. baking soda (1/4 tsp)

  • 65 grams cacao nibs (1/2 cup) OR equiv. amt. of  walnut or pecan crumbs

 

Directions

  1. Preheat oven to 350° F.

  2. Add all the ingredients (except cacao nibs) to a food processor or highspeed blender and process till smooth.

  3. Transfer to a bowl and stir in chopped cacao nibs or walnut crumbs.

  4. Scoop dough by teaspoonfuls onto cookie sheets and bake for 20-25 min or until golden.

 

Notes:

  • Cookies freeze well and can be eaten directly from freezer.

  • For vegan option, substitute maple syrup or date paste for the honey.
